Could someone clarify how Priority Assigments reset? I did all 3 two days ago in the morning, and yesterday evening (so more than 24h apart) only 1 was reset. How does this work? I get one mission per day?

You receive 1 assignment per day which can accumulate to 3 assignments in 3 days but thats the limit.

And I get one mission per reset? I got only one again since yesterday, but i did only one yesterday, so if all 3 resets in 24, I should have 3 now.

Looks like its per 24 hours since you finished last assignment
